Its origins can be traced back to Persian traders who left behind a variety of kababs and Indian flatbread in addition to biryani. The meat is cooked in an onion and green chilli masala then topped with fragrant rice in Bhatkali biryani. Biryani is made up of two Persian words: Birian, which means fried before cooking, and Birinj, which means rice. While there are several hypotheses as to how biryani arrived in India, it is widely agreed that it originated a dish of meat, fish, or vegetables cooked with rice and spiced with saffron or turmeric in India.
