Located in Rush, Colorado, we are proud 5th-generation cattle ranchers who specialize in raising premium Black Angus beef. It takes a full 2 years to prepare our beef for butchering, and during the winter season, we ensure our cattle receive high-quality feed, hay, minerals, and salt to maintain their health and well-being. We take great care to ensure our animals live a happy and natural life, and we never pen them up. Our cattle are free to graze on the grass until the day they are ready for butcher. This approach not only contributes to the quality of the meat, but it also enhances its flavor.

Production and sale of grass fed, local pasture finished beef on Eastern Long Island. Our beef are humanely raised and never given any growth promoting antibiotics or hormones.

We raise F1 cross cattle by breeding our registered Akaushi Wagyu bull with registered Angus and Pinzgauer cows. Wagyu are known for their high marbling content and elevated levels of oleic acid, a healthier monounsaturated fat. This results in beef that not only boasts exquisite marbling but also offers heart-healthy benefits by lowering cholesterol. During cooking, the marbling melts down, infusing the meat with the delicious buttery flavor that Wagyu is known for. Our carefully crafted crossbreeding approach guarantees a consistently delightful eating experience with every order.

Hollis Hills Farm was started in 2009 by Jim and Allison Lattanzi. It started with a small flock of chickens, soon adding a few pigs bought at a pig scramble at the county fair and finally adding some beef cows.
